Ingredients:
4 medium sized Potatoes- (buy big firm ones)
Oil for frying
2tsp Salt
Potato slicer

How to make:
1. Wash potatoes thoroughly to remove all the dirt and peel the skin.
2. Take a bowl filled with water and slices the potatoes thinly with slicer directly in the water to avoid browning.
3. Once all the potatoes get sliced mix the slices in water and drain it.
4. Take a bowl and add water and salt and soak potatoes for 30 minutes in salty water to remove the starch from potatoes.
5. After 30 minutes drain the potatoes and rinse with water and then drain again.
6. Spread the slices in a towel or cotton cloth. Pat it dry by covering with another towel. Make sure there is no moisture in the slices.
7. Heat oil in a pan. Do not let the oil fume or smoke at any point. So for checking the right temperature drops a piece of potato slice and if it rises immediately on top it means the oil is just right to fry the potatoes.
8. Keep the medium low flame and drop the potato slices in batches (Do not over crowd the pan, fry the slices in batches.) and fry till the sizzling noise ceases and bubbling of oil settles down. Keep turning once in a while so that it gets fried evenly. Once the chips becomes light golden brown and crispy remove and drain on kitchen towel.
9. Repeat the same for all batches and keep it in kitchen towel to drain the excess oil.
10. Once you have finished frying all the slices, Season with additional salt if desired.
11. Store in an air tight container when it is cooled down and serve as needed.
