Drain the water. Let potatoes cool down, then peel the skin off. Mash the potatoes and add in all the spices and peas. Combine well and now the potatoes are ready to be stuffed.Take 1 pastry shell ( the one I used was a large square piece which I cut into 4 smaller pieces). Fill in the potatoes, fold the pastry (watch the video to learn how to fold the samosas and then deep fry them until golden brown. Serve with Mint or Tamarind Chutney.
