How to make Masala Khichdi WITHOUT RICE?!/How to make Masala Khichdi/ | Sujan Fun Kitchen

#MasalaKhichdi is a comfort food; it has gained reputation as it’s loaded with nutrition from the combination of lentils, vegetables and rice. But, my recipe of Masala Khichdi comes with a healthy twist - I have used Foxtail Millets in place of rice thus benefiting all the weight watchers.
So, here's another exciting recipe of #MasalaKhichdi from #SujanFunKitchen, using Millets and Dals.
Masala Khichdi

Ingredients for boiling or pressure cooking

Foxtail millets - 1 cup

Tur Dal - ¼ cup

Masoor Dal - ¼ cup

Mung dal - ½ cup

Turmeric powder - ½ tsp

I used the above ingredients; but one can easily use rice and any of the above Dals - the ratio of rice and Dals could be 1:1 or 1 : ½ 

Method for boiling:

Wash the millets and Dals thoroughly well in running water, several times

Drain them of the water

Pressure cook all the millets and Dals in 5 or  6 cups of water and turmeric - it has to be cooked to a mushy consistency

Keep aside the cooked mix

Ingredients for the Masala Khichdi:

Ghee - 4 tbsp

Mustard - 1 tsp

Jeera/cumin seeds - 1 tsp

Bay leaf - 1

Onions - 2 medium or 1 big

Green chillies - 2

Ginger - to taste

Tomatoes - 2 big or 4 small

All kinds of vegs like carrots, broccoli, peas, beans, cauliflower, potatoes - according to taste - the chopped veg can be 4 cups or 5 cups

Sambar powder - 1 tsp

Garam masala - 1 tsp

Turmeric powder - ½ tsp

Asaefotida - ½ tsp

Salt to taste

Lemon juice - to taste

Coriander leaves - to taste

Method:

Chop all vegetables 

In a big pan, heat ghee

Splutter mustard seeds and jeera

Add bay leaf and saute over medium flame

Add onions and saute till translucent

Add the green chillies and ginger and stir together

Now, add the chopped tomatoes and saute together

Add all the chopped vegetables and stir fry

Now, add some water and cook the vegetables covering the pan

After few minutes, the vegetables would have cooked well

Now add the sambar powder and garam.masala powder - stir together

Add asaefotida and mix

Now, add salt

It's now time to add the boiled millets and Dals - add to the vegetables and cook together

Add boiling water to adjust consistency - or else Khichdi will become will become too thick. Ensure that the Masala Khichdi is of a pouring consistency

Add lemon juice to enhance taste and get rid of the starchiness of the millets and Dals

Garnish with coriander leaves

Serve hot with Papad, curd and pickle
