It's very easy to make Malai Kofta at home. Let me show you how. It's a dish that is relished by one and all.Ingredients for the Gravy:2 tbsp Ghee2 sticks Cinnamon3 Cardamom3 Cloves2 Bay leaves2 Onions chopped 3 Green Chillies2 tsp Ginger Garlic paste2 Tomatoes choppedSalt to taste5-6 Cashew nuts1 tsp Melon seeds (Magaz)1 tsp Cumin (Jeera)1 tsp Kashmiri Chilli powder1/2 tsp Sugar1/2 cup Milk1/2 cup Water1 tsp Kasuri Methi3-4 tsp CreamCoriander leaves Method: Heat 1 tbsp Ghee and put Cinnamon, Cardamom, Cloves, Bay leaves, chopped Onions, Green Chillies and Ginger Garlic paste and saute for 2 minutes. Add chopped Tomatoes and salt to taste and saute again for 3-4 minutes. Add Cashew nuts and Melon seeds and saute for a minute. Keep aside to cool and then grind this mixture to a smooth paste. Next heat 1 tbsp ghee and put in Cumin and the Onion paste. Cover and cook for 2-3 minutes. Add Kashmiri chilli powder, Sugar, Salt and Milk and let the gravy cook for 2 minutes. Next add 1/2 cup water and cook for 2-3 minutes. Finally add Kasuri Methi, Coriander leaves and Cream and mix well. Gravy is ready.Ingredients for Kofta filling:1 tbsp Raisins2 tsp Cashew nuts chopped1 green Chilli choppedA pinch of Salt Ingredients for the Kofta:4 Boiled Potatoes1 cup Paneer grated1 tbsp Cornflour1/2 tsp Fennel powder1 tsp Chilli powder1 tsp Garam masalaCoriander leavesSalt to tasteMethod: Mash the boiled potatoes. To this add grated Paneer, Corn flour, Fennel powder, Red Chilli powder, Garam masala, Salt and Coriander leaves. Mix well and make smooth balls by first stuffing the nuts in the center of the Paneer mix. Fry these Koftas in oil till golden brown. For plating, arrange Koftas on a plate and pour hot gravy over it and drizzle cream and serve garnished with Coriander leaves. Please like, share and subscribe.
