How to make lachha paratha at home @Cooking with Asifa  . Flaky Layered Paratha. Lachey dar paratha food recipe @Cooking with Asifa Lachha paratha is a special multi-layered bread fried in ghee. In this video, we present to you three different ways in which you can make Layered & what paratha enjoy at breakfast time with Nihari, Chaney or Haleem as well.
Ingredients:-
Cooking Oil (3 tbsp)
Desi Ghee / Clarified Butter (as you like)
Spices:
Salt (as you like)
Others:
All-Purpose Flour (2 cups)
Wheat Flour (2 cups)
Water (2.5 cups)
Recipe:-
In a bowl, mix all-purpose flour (2 cups), wheat flour (2 cups), salt & knead with water for a few minutes.
Let it rest for 10 mins and knead again with oil (3 tbsp) for 5 minutes approximately.
Cover the dough and keep it in the refrigerator for 30 minutes.
From the dough, make 3 large dough balls and 5 small dough balls(half the size of big ones).
Roll it to make a thin circle (like chapati).
Now grease the chapati with oil and sprinkle wheat flour(it helps to get flaky layers) over it.
From first dough ball, create pleats by folding the dough from one side with the help of fingers & stretch it & roll the pleated dough like a Swiss roll and press the end gently with the thumb under the dough as shown in the video and set aside.
For the second dough ball, fold it like a fan. Start from one end of the circle and fold the dough over, hold the folded part of the dough and fold it underneath the circle. Stretch the dough as much possible & roll it like a Swiss ball and set aside.
For the third dough ball, roll the dough to make plain chapati and grease it with butter. Cut from center to an end with the help of cutter or a knife and roll the dough like a cone shape. now press the cone-like dough into a dough ball and set aside.
Now roll the 5 small dough-balls and grease them with butter and sprinkle flour & place them on each other one by one by after greasing and dusting. Roll the circle again and cut it with cutter into stripes and roll the stripes and make dough ball again.
Place the dough balls in the refrigerator for 10 minutes and then roll them and fry them on a skillet with clarified butter.
Delicious Laccha Paratha is ready to eat.
