How to make Indian Snacks - Vegetable Poha Recipe | Eat East Indian

Quick and easy Indian snack which is enjoyed with cup of Chai or you can make it for breakfast and take it for lunch. Its spicy, flavourful and healthy. Here's how I make vegetable poha.

Ingredients/ Method

300 gms Poha/Rice flakes
1 small onion
2-3 tbsp oil
2 cups of chopped veggies of your choice
1/3 cup raw peanuts
10-12 dried curry leaves
2 tsp mustard seeds
1 tsp cumin seeds
2-3 tbsp tomatoes
Salt per taste
1 tsp turmeric
1 red chilli
3 tbsp lemon juice
1/3 to 1/2 cup chopped cashew nuts
2-3 tbsp spicy sev for garnish
Cilantro for garnish

- Wash Rice flakes thoroughly so that they are wet. Heat oil in pan. Add mustard seeds/ cumin seeds. Fry and then add onions/curry leaves and peanuts. Fry along with salt/turmeric and red chilli.
- Add veggies. Fry for couple mins. Add tomatoes.
- Once tomatoes are tender, add rice flakes. mix well.
- Add lemon juice.
-Garnish with sev, cashews and cilantro leaves. Enjoy :)
