DATE AND TAMARIND CHUTNEY

Ingredients

100 grams seedless dates
100 grams tamarind
1 cup chopped jaggery
2 tsps fennel seeds
1 tsp cumin seeds
½ tsp red chilli powder
Black salt to taste
½ tsp dried ginger powder
Samosa for serving


Method


1. Chop the dates. Take tamarind in a bowl.
2. Add sufficient water and soak for 25-30 minutes.
3. Heat a deep nonstick pan. Transfer the soaked tamarind and soaked dates along with water. Add jaggery and mix well. Cover and cook for 10-15 minutes.
4. Heat a nonstick pan. Dry roast fennel seeds and cumin seeds for a minute or till fragrant. Transfer in a mortar and coarsely crush with the help of a pestle.
5. Remove the scum on top of the jaggery mixture.
6. Add red chilli powder, black salt, dried ginger powder, 2 tsps of ground spice mix and mix well.
7. Cook for 8-10 minutes more. Strain and serve with samosa.
