Avial is a delicious preparation made with mixed vegetables, curd, coconut and seasoned with coconut oil and curry leaves.It is a dish which is believed to have been originated from South India and is common in Kerala, and Udupi cuisine. Ingredients:
water
½ tsp of turmeric powder
1 inch pieces of drumsticks
1 inch pieces of pumpkin
1 inch pieces of beans
1 inch pieces of yam
1 inch pieces of carrots
1 cup of shredded coconut
5 green chillies
2 tsp of cumin seeds
water
1 cup of yogurt
salt
coconut oil
curry leaves

Method:
-Boil some water and add turmeric powder and 1 inch pieces of drumsticks,pumpkin,beans,yam and carrots.
-Once done drain out the water.
-In a blender add shredded coconut, green chillies, cumin seeds, water and grind it into a paste.
-Add the paste into the vegetables and mix it properly
-In the blender beat the yogurt and then add into the veggies
- Turn on the flame, add some salt and mix it again
- Turn off the flame and add coconut oil and curry leaves
- Avial is ready to be served
