How to make a Vegetable Stock, use as many vegetables as you have lying around. Add these to boiling hot water and simmer gently for 120 minutes. Strain, cool down and refrigerate for up to 7 days or freeze. The basic ingredients are carrots, celery, onion and garlic. You can then add parsley stalks, thyme, capsicum stalks, broccoli stalks, tomato scraps and root bases like cabbage or even celery. Add 2 bay leaves for extra flavour. A great beef or chicken stock alternative.
