Osaman is is quite simply a spiced consomme, but in a Gujrati style. Made with dal water and flavored with a whole array of spices, this dish goes best with thick Lachko dal and steam rice.

Ingredients
3 cups of dal water (1/4th cup of split pigeon gram cooked in pressure cooker with 3 cups of water and a pinch of turmeric powder gives the dal water)
I tbsp clarified butter
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp fenugreek seeds
½ tsp asafetida
1 tbsp ginger-chilli paste
Salt to taste
3-4 pieces of dried kokum
1-2 tbsp jaggery
Sliced radish
Curry leaves
1 green chilli, sliced into two
2 tbsp coriander
2 tbsp grated coconut
