PREP TIME: 2 HOURSCOOK TIME: 45 MINUTESSERVES: 6-8 INGREDIENTS2 cups of black eyed beans, soaked (preferably overnight).2 chicken sausages1 medium onion5 scotch bonnet pepper2 tbsp crayfish powder3 tbsp palm oil1 tbsp salt DIRECTION De-skin and rinse the soaked beans. Pour into a blender, add onion, scotch bonnet pepper , a little water and blend into a smooth mixture. Pour into a mixing bowl, add crayfish powder, salt, stir in then add palm oil. Pour into a palm oil greased pan then place the sausage in the centre and push the sausage into the moimoi mixture till its buried then set aside. Pour one litre of water into a deep baking tray to enhance steam then place the moimoi mixture gently in the water and cover with aluminium foil. Bake at 180c for 45 minutes, then take out of the oven Moi Moi ready to serve. Slice and share.
