How To Prepare Chunky Shito

PREP TIME: 20 MINUTES
COOK TIME: 50 MINUTES
SERVES: 8-12

INGREDIENTS
2 cups herrings, coarsely pulsed.
2 cups shrimp, coarsely pulsed.
2 medium onions, pured.
1 cup ginger, coarsely chopped.
5 cloves of garlic, pured.
200g tomato paste
1 cup chilli flakes
1 tsp fennel seeds
1 tsp tnise seeds
3 bay leaves
1 tsp ground rosemary
1 litre vegetable oil
2 tbsp salt

DIRECTION
Heat vegetable oil in a saucepan over medium heat, add fennel seeds, anise seeds, stir then add pure onion, garlic, stir and let it simmer for 5 minutes
Add tomato paste, stir and let cook for 10 minutes then add ginger, stir and let it simmer for 5 minutes.
Add chilli flakes, stir and let simmer for 5 minutes.
Add herrings, shrimp powder, stir , add more oil and let simmer for 10 minutes
Add bay leaves, ground rosemary , stir and let simmer for another 5 minutes
Add and adjust salt to your taste and let simmer for 3 minutes.
Chunky shito ready to serve.
