I never enjoyed turkey burgers before now. They were always dry and bland in flavor. Why? Because I didn't know better. You can't take ground turkey and make a patty out of it, season it with salt and pepper and expect it to turn out like a beef hamburger. It just doesn't work.

With turkey you have to enhance it to make the meat taste good. The way to make it moist and juicy? Add grated zucchini!

I'm telling you this works. My husband couldn't even tell there was zucchini in it. I was amazed. He loved the burger. In fact he didn't want me to tell him what made it so juicy. He is not a fan of zucchini so I didn't tell him.

I said "you can watch my video if you really want to know!"

So adding grated zucchini takes care of the juicy part. Now for the flavor. I added some fresh-from-the-garden basil and Italian flat parsley for starters. Then I minced about 2/3 cup of yellow onion, really small. That way you get onion flavor through out the whole burger.

The other great addition is worcestershire sauce. It gives it a beefy kind of taste. It really does the trick. Then to round out the flavors, you add salt, and garlic powder.

Here are the ingredients:
1 lb. ground turkey, either dark meat or breast
2 cups finely grated zucchini
2/3 cup finely diced yellow or red onion
1 tsp. or a little less salt
1 tsp. garlic powder (no salt)
handful of fresh Italian parsley, finely chopped
6 or 7 leaves of fresh basil, chiffonade (watch video to see how to do this)
1 tsp. Worcestershire sauce

After you get everything together in a bowl and mixed well together, make patties but not too thick. I inch thick works best. They plump when you cook them anyhow.

It's best to fry them in a pan, I like cast iron, instead of trying to grill these on the bbq. These patties are a bit fragile and tend to fall apart so cook them gently.

To a frying pan add a little bit of oil to coat the pan. Heat over medium high heat, add the patties and reduce the heat to low. These tend to want to burn quickly on the outside, leaving the inside raw.

Flip the burgers after 3 or 4 minutes. Cook an additional 4 minutes on the second side. Then cover the pan with a lid and cook an additional 3 to 4 minutes until the juices run clear.

Then you can add some cheese on top if you like. You can use pepper jack, american, cheddar or monterey jack. They all work great.

You can serve these zucchini turkey burgers on toasted hamburger buns or on a lettuce wrap like I did in the video. So they can be gluten free if you wish.

I garnished my burgers with lettuce, tomato, and avocado and let me tell you it was delicious!
