Mexican wedding cookies, Russian tea cakes, Butterballs, Polvorones, Nutballs...and known as a dozen other names, these snowball cookies are buttery and delicious!Daily on Instagram @ASquishyMonsterIngredients:2 c unbleached flour ts fine salt ts cinnamon {optional} c toasted, chopped nuts {walnuts, pecans, hazelnuts, almonds, etc} c sifted powdered sugar1 stick soft, unsalted butter1 ts vanilla {or nut} extract2 c powdered sugar {for rolling}Instructions:In the first {dry} bowl, mix the flour, salt, cinnamon {if using} and nuts together.In the second {wet} bowl, cream together the butter and sugar. Add the extract.Combine the first and second bowls together in thirds, taking care not to over mix.Scoop out and bake at 350 {for my miniature scoops, it took 13-17 minutes}Once they've cooled a bit, roll in the powdered sugar.Let them cool completely and roll in powdered sugar once again.
