How to Make Potato Leek Soup

Ingredients

1/2 cup salted butter
2 leeks, sliced, white and pale green parts only
1 quart chicken broth
2 tablespoons cornstarch
4 cups diced yukon gold potatoes
2 cups heavy whipping cream
2 teaspoons salt, divided
1/2 teaspoon pepper


Instructions

1 00:00:37 - Melt butter in a large pot over medium heat.

2 00:00:43 - Cook leeks in butter and 1 teaspoon salt about 10 minutes. Stir frequently.

3 00:01:07 - Stir cornstarch into leek mixture. Slowly add in broth and stir to dissolve cornstarch mixture.

4 00:01:35 - Add potatoes, 1 teaspoon salt, and pepper and bring to a boil.

5 00:02:04 - Reduce heat and add cream and simmer 30 minutes until potatoes are tender. Serve hot.
