Here's my take on a very traditional Greek dish call spetsofai. I've changed it up a bit by replacing the sausage with roast pork loin pieces and instead of crushed tomatoes I've added white wine. This dish also uses red bell peppers, onions and celery and can be served on its own or with a side salad, which makes it Keto friendly or on a bed of rice. Either way, whichever route you go, it is still going to be an absolutely fantastic dish. And since it's all done in one pan, clean up will be a snap as well....INGREDIENTS LIST* 4-5 lb pork loin* 2 onions* 2 celery stalks* 2 carrots* 2 cups chopped red pepper* 1/3 cup Greek extra virgin olive oil* 1 cup dry white wine (preferably Greek LOL)* 2 tbsp. dried rosemary* Salt & pepper to tasteScroll down to find the link to more of my Greek inspired Keto diet friendly recipes.
