HOW TO MAKE PICKLED CUCUMBERS In this episode, I'd like to show you how I prepare pickles for the winter. It is very easy to make and tastes so delicious! I pickle cucumbers, but you can use this recipe with just about any vegetables. (2 pounds) pickling cucumbers1 cup fresh dill and its stalks2 tsp black peppercorns3 tbsp pickling salt4 1/2 cups drinkable water1 cup vinegar (apple cider or grape)8 cloves garlic (peeled)1 tsp lemon salt1 quart-2 jarsDIRECTIONS Pour 4 1/2 cups water in a saucepan. Add 3 tbsp salt and bring to a boil over medium heat.Meanwhile, rinse the cucumbers then remove the stems.Using a fork, gently poke 2-3 holes in cucumbers, then turn and repeat the same process on the other side.When water comes to a boil, reduce the heat and cook cucumbers in batches for about 10-15 seconds, then remove and drain.Add 1 cup vinegar into the water then turn off the heat and let cool.Pour 1 tsp peppercorns into bottom of each jar.Layer up the buttom half of the jar with cucumbers lengthwise.Add 2 cloves of garlic and place the stalks of dill.Then top the jar with cucumbers, leaving a headspace from the rim of the jar.Add 2 more cloves of garlic.Cover the top with dill leaves and sprinkle 1/2 teaspoon lemon salt over the top.Leaving a headspace, pour warm vinegar&water mixture over cucumbers and close the lid tightly.Repeat with the other jar.Allow to ferment at room temperature for a minimum of two weeks.Gently shake or turn the jars 3 or 4 times daily, to combine the flavors.After a week check the water level occasionally and complete with drinkable water if needed.Check the pickles for doneness after about 2 weeks.Once you slice a pickle if there is a white circle in the middle, wait one more week.Then check again for doneness.Although we have completely eaten 1 jar of pickles, between the week 2 and 3, while testing :)Once complete store in a cool, dark place or refrigerate, they keep for months.READY :) Thank You For Watching!If you enjoyed the video please subscribe to my channel, leave a like and share your comments below for more recipes.
