Banana Pancakes Recipe
Ingredients:
cup almond milk or alternative
cup coconut flour
2 scoops Collagen protein powder
1 medium ripe banana, mashed until liquidly
3 eggs
tsp. Vanilla
Pinch of salt
1 tsp. Baking soda
Avocado oil
A little bit of butter
Fresh organic strawberries and blueberries

Directions:
Add the milk to a medium bowl and whisk in the collagen protein powder and then the coconut flour. Add more milk if the mixture gets too thick. Set aside.

In another bowl mash the banana until it become more like a liquid and is pretty smooth. Add the eggs, vanilla and pinch of salt. Whisk to combine.

Add the flour mixture to the egg mixture and blend with the whisk. Add the baking soda and combine. Let the batter sit while we preheat our pan and slice and mash up our strawberries and blueberries.

I like to mash the strawberries a bit to make them a little saucey. That way I do not miss the maple syrup. The fresh fruit is refreshing!

Once the frying pan is hot (on medium temperature) add 1 to 2 tps. Of oil and 1 tsp. of organic butter to the pan. Swirl it around and add pancake batter. Cook the pancakes until you see the sides start browning up, the top is less shiny and when you look underneath, the pancakes look golden brown.

Serve these by placing scoops of strawberries and blueberries on top. So good.
