Katie shows you how to make Korean Sweet Pumpkin Soup. It is one of her favorite soup for the fall season. Simple, fast and healthy. Korean (Sweet) pumpkin has a very light taste to it. Not overpowering, but subtle. It works well with a piece of avocado toast. In Korea, we like to add some rice to this soup and turn it into a porridge. Good for when you are sick or don't have an appetite. We thought we would show you how to make the soup base first. To turn this into a porridge, mix in a bowl of cooked white rice when you blend the soup in the blender. Otherwise, enjoy and get out the fall jackets!
