Authentic recipe for greek stuffed vegetables - gemista or yemista! This is the taste of Greece! Ingredients: 5 tomatoes, 5 zucchinis(courgettes), 2 aubergines(eggplants), 1/2 kg ground beef, 1 cup of medium grain rice, 1 big chopped onion, 1 crushed clove of garlic, 1 cup chopped fresh parsley, 1 teaspoon dry spearmint, salt and pepper, a bit of sugar, 1/2 olive oil for saut the ground beef, 1/2 cup olive oil to drizzle on the vegetables in the pan.
