Cherry Salsa Recipe
Ingredients:
2 cups cherries, rinsed, deseeded and chopped
1 tsp. Sugar, or more to taste
1 cup cucumber, skin removed, sliced and chopped
1 or more jalapeno, deseeded, chopped fine
cup red onion, finely chopped
tsp. Salt
Zest from 1 lime
Juice from of a lime
2 tsp. Balsamic vinegar
cup or more of walnuts, chopped

Directions:
Place the cherries and sugar into a bowl and stir. Add the cucumber, jalapeno, onion, zest and juice from a lime, the salt, and the balsamic vinegar and stir to combine. Chill the salsa for hour and then add the walnuts and stir right before serving.

This salsa goes with just about any protein, chicken, fish and beef. You can also just serve with chips and or vegetables for a wonderful appetizer. Enjoy!
