Cauliflower Chicken Fried Rice

Ingredients:
1 large head of white cauliflower, cut into florets
3 green onions, sliced
2 cloves garlic, minced
1 cup carrots, sliced
1 tsp. Fresh ginger, minced
2 eggs, beaten
4 chicken thighs, boneless, skinless, cut into inch chunks
1 cup frozen peas
5 Tbsp. Coconut Aminos
Sesame oil
Salt

Directions:
Cut the florets off of the cauliflower head and place them into a food processor until its half full. Pulse until the cauliflower looks like rice. Pour the rice into a larger bowl. Process all the cauliflower until its all processed.

Heat a wok or large frying pan over medium high heat. Add 1 tsp. of sesame oil to the pan. Once it is hot add the chicken, season with salt and stir fry until it is no longer pink. Once done, pour the chicken into a bowl and keep warm.

In the same frying pan, add a good tablespoon of sesame oil and add the carrots and green onion. Add a light sprinkle of salt. Saute for about 5 minutes or until the carrots start to get soft.

Then add the garlic and ginger to the carrots and saute an additional 1 minute. Next add the cauliflower and another tablespoon of sesame oil, and a little more salt and saute it for 5 minutes over medium heat stirring frequently.

Then add the coconut aminos to the cauliflower and stir it in to combine.

Push the cauliflower to one side of the pan and add the beaten eggs to the pan. Scramble until they are done and then mix them into the whole mixture.

Add the peas and chicken and stir until everything is combined well. Continue cooking until everything is heated through, about 2 minutes.
