How To Make Baked Eggplant Rolls

Here is an absolutely delicious recipe for how to make baked eggplant rolls. This Greek eggplant recipe is low carb Greek cooking at its best. As this baked eggplant recipe calls for baking rather than frying, it a much healthier option. Simple slice and bake your eggplants, prepare the Greek style meat sauce (recipe link in the description below), roll your eggplant slices and bake. That's it!!! This dish makes an excellent main with a side salad or you can omit the ground meat and have it as a vegetarian main or side.

INGREDIENTS LIST

* 2 large eggplants
* 1 lb. lean ground beef
* 1 onion
* 2 cloves garlic
*1/4 cup Greek extra virgin olive oil
* 14oz crushed tomatoes
* 1/4 cup water
* 1/2 tsp. crushed cinnamon
* 1/4 tsp. cayenne pepper
* Salt & pepper to taste
