How To Cook Groundnut Soup ( Peanut Soup).

Groundnut soup or Peanut soup is a West African soup made from grinded groundnut or peanut butter, tomatoes, pepper, spices and stock. Groundnut soup or Peanut soup is very groundnutty. But the groundnuts undergo a process of gradual roasting and fine grinding. if you do not want to roast your own groundnuts, you can use plain peanut butter off the jar. It is basically the same thing as groundnut paste. But I love roasting and grinding my own groundnuts because, to me the soup tastes more delicious and authentic. Different countries in Africa have different ways of preparing this soup. Sometimes, it is cooked with palm oil, sometimes, it is simmered with a variety of meats. I love eating my groundnut soup with rice. It also goes well with some boiled plantains, pounded yam and Eba etc.
Ingredients used: 2 Cups Of Groundnut,
3 Fresh Tomatoes, 1/2 or Half Teaspoon Of Garlic Powder, 1/2 or Half Teaspoon Of Ginger Powder, 3 Maggi Cubes (2 use for cooking the chicken in the tomato mix sauce, while 1 use for the soup), 2 Scotch Bonnets Or Habanero peppers, 2 Red bell Pepper, 1 Large Onion ( Half was sliced the other half was blended with the tomato and pepper), Handful of spinach, 1 Teaspoon Of Salt (Half use to cook the chicken, while the other half use for the soup), Water, Chicken and Catfish.
