Ingredients

1 (2-3 pound) salmon filet deboned
1/2 cup soy sauce
1/4 cup honey
1/4 cup orange juice
4 cloves garlic minced
1 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1 orange thinly sliced (optional)
1 tablespoon minced fresh parsley for garnishing (optional)

Instructions

1 Place the salmon fillet in a shallow dish or gallon-sized resealable plastic bag.

2 In a small bowl, whisk together the soy sauce, honey, orange juice, garlic, ginger, and pepper flakes. Pour the marinade over the salmon. Cover or seal and transfer to the fridge to marinate for 30 minutes.

3 Place the salmon fillet in the center of the baking sheet. Place the orange slices (if using)on top of the fillet and then loosely wrap aluminum foil around the fillet to trap the steam. Bake for 15-20 minutes or until the salmon flakes easily with a fork. Top with the minced parsley (if using).

Flavor Variations:

Lemon-Garlic Salmon: For the marinade, use 2 tablespoons olive oil, 2 tablespoons lemon juice, 3 minced garlic cloves, 1/2 teaspoon salt, 1/2 teaspoon dried basil, 1/2 teaspoon dried oregano, and 1/4 teaspoon black pepper. Top with thinly sliced lemon and bake as instructed. Garnish with fresh parsley.

Garlic-Dill Butter Salmon: Skip the marinating and simply whisk together 1/2 cup melted salted butter, 1/4 cup lemon juice, 8 crushed garlic cloves, and 2 tablespoons freshly minced dill. Drizzle the sauce over the salmon fillet and bake as instructed.

Chili-Lime Salmon: Skip the marinating and whisk together 1/4 cup lime juice, 2 teaspoons chili powder, and 1/4 teaspoon salt. Brush the liquid over the top of the salmon fillet and top with thinly sliced lime. Bake as instructed and garnish with chopped fresh cilantro.
