Hot Cross Bun French Toast Muffins

FULL RECIPE:

Serves 16

Hands-off time: 35 minutes

INGREDIENTS

7 large eggs
1 tin (410g) SPAR Brand Full Cream Evaporated Milk
4 tbsp sugar

For the Caramel Hot Cross Bun French Toast Muffins:
2 packs (6 each) SPAR Freshline Traditional Hot Cross Buns
cup SPAR Caramel Fantasy

For the Chocolate Hot Cross Bun French Toast Muffins:
2 packs (6 each) SPAR Freshline Chocolate Flavoured Hot Cross Buns
cup chocolate spread

Serving suggestion:
Vanilla ice cream or Chocolate ice cream
Mixed berries like blueberries, strawberries and raspberries

METHOD

1. Preheat the oven to 180C and generously grease 16 holes of 2 muffin tins with non-stick cooking spray. *Chefs Tip: Grease with a knob of butter if preferred!

2. Combine the eggs, SPAR Brand Full Cream Evaporated Milk and sugar in a large mixing bowl with a spout and whisk until smooth.

For the Caramel Hot Cross Bun French Toast Muffins:
3. Cut the SPAR Freshline Traditional Hot Cross Buns into bite size chunks. *Chefs Tip: Perfect for using up leftover hot cross buns!

For the Chocolate Hot Cross Bun French Toast Muffins:
4. Cut the SPAR Freshline Chocolate Flavoured Hot Cross Buns into bite size chunks.

5. Soak the hot cross bun pieces in the french toast egg mixture for 3-5 minutes.

6. Divide half of the soaked hot cross bun pieces between the 12 muffin holes.

For the Caramel Hot Cross Bun French Toast Muffins:
7. Dollop a heaped teaspoon of SPAR Caramel Fantasy on top of the soaked bun pieces.

For the Chocolate Hot Cross Bun French Toast Muffins:
8. Dollop a heaped teaspoon of chocolate spread on top of the soaked bun pieces.

9. Spoon the remaining soaked hot cross bun pieces on top of each other.

10. Bake the muffins for 20-25 minutes until golden and baked through. *Chefs Tip: A skewer that comes out clean when inserted means it is done!

11. Cool the muffins in the tin for 5-6 minutes. Using a butter knife gently loosen the muffins from the tray and transfer to a serving platter.

For the Caramel Hot Cross Bun French Toast Muffins:
12. Serve with a scoop of vanilla ice cream, garnish with mixed berries and ENJOY!
