Do not keep the heat low while stir frying veggies or cook for more than 4 - 5 minutes. Otherwise vegetables will lose their colour and the crunchy texture.2. Cut the vegetables and prepare all other ingredients before you start cooking (This tip is very important for all Chinese/Indo-Chinese recipes)3. First add mushrooms as we want it to be lightly browned and then add all the hard vegetables, like - carrot, broccoli, beans. Lastly add red cabbage and bell pepper as they don't need much time to cook. And if you overcook them they will lose their colour and texture.4. Keep checking the salt. As soy sauce has a lot of salt in it, I've added only half tsp salt and then adjusted towards the end.5. To balance the taste you can add 1/2 tsp sugar or ketchup.
