Hot and Sour Veg Soup Recipe | How To Cook Restaurant Style Hot and Sour Soup | Winter Soup Recipe | Poulami Chatterjee

This spicy hot & sour soup is perfect for any winter day! I have used veggies whichever I like, you can use any veggies of your choice. Let's look at the ingredients we need for this recipe.

Ingredients -

1 tbsp ginger julienne
3- 4 garlic cloves (chopped)
2 cups sliced mushroom
1 cup broccoli florets
1/4 cup thinly sliced carrot
1/3 cup finely chopped french beans
1/2 cup thinly sliced bell pepper
1 cup shredded red cabbage
1/3 cup finely chopped celery
1/4 cup finely chopped green onion
3 green chillies finely chopped
1/2 cup chopped coriander
1/2 tsp salt
1 tsp Black pepper
2 tsp dark soy sauce
1/2 tsp rice vinegar
2 tsp hot chilli sauce
1 1/4 cup vegetable broth
1 cup boiling water
1/4 cup corn starch slurry

Important tips -
1. Do not keep the heat low while stir frying veggies or cook for more than 4 - 5 minutes. Otherwise vegetables will lose their colour and the crunchy texture.
2. Cut the vegetables and prepare all other ingredients before you start cooking (This tip is very important for all Chinese/Indo-Chinese recipes)
3. First add mushrooms as we want it to be lightly browned and then add all the hard vegetables, like - carrot, broccoli, beans. Lastly add red cabbage and bell pepper as they don't need much time to cook. And if you overcook them they will lose their colour and texture.
4. Keep checking the salt. As soy sauce has a lot of salt in it, I've added only half tsp salt and then adjusted towards the end.
5. To balance the taste you can add 1/2 tsp sugar or ketchup. But before adding check the taste of your soup.
