Honey Garlic Shrimp

Ingredients

1-1 1/2 pounds of peeled and deveined shrimp
1/4 cup honey
2 tablespoons soy sauce
2 tablespoons olive oil divided
2 tablespoons minced garlic
1 tablespoon rice wine vinegar
1 teaspoon minced ginger
1 teaspoon red pepper flakes adjust for spice level
4 cups snap peas or snow peas

Instructions

1 In a small bowl, whisk together honey, soy sauce, 1 tablespoon of olive oil, minced garlic, rice wine vinegar, minced ginger, and red pepper flakes to make the sauce.

2 Marinate the shrimp in the sauce for 15-20 minutes.

3 Heat the remaining tablespoon of olive oil over medium heat in a pan. Once heated, add in the marinated shrimp and set aside the remaining marinade. Cook the shrimp for 2-3 minutes.

4 Once the shrimp start to turn pink, add in the snap peas or snow peas and the remaining marinade. Stir carefully and cook the peas alongside the shrimp until the shrimp are fully cooked and the peas are slightly tender, about 5-7 more minutes.

5 Serve on a bed of cooked rice.
