Recipe -

Homestyle Sambhar with Idli & Molgapodi

Ingredients
Arhar Dal
Turmeric Powder
Salt
Del Monte Extra Light Olive Oil
Eggplants
Drum sticks
Carrots
Beans
Sambhar onions
Jaggery (optional)
Sambhar powder
Tamarind water
Curry leaves
Chopped tomatoes
Hing
Dry Red chilies
Green chilies
Urad dal
Mustard seeds
Podi
Water

Method
Boil the dal first with a tsp of olive oil, turmeric powder, salt and water
The dal should be well cooked after 4 to 5 whistles
Blend it well to make it a homogeneous mixture
Add eggplants, drum sticks, carrots, sambhar onions and beans to the dal mixture
Add sambhar powder, jaggery and tamarind water, curry leaves & chopped tomatoes and mix well
Add water and pressure cook for one whistle
Heat the idli steamer with water
Grease the idli moulds with olive oil
Put idli batter in the moulds
Now, put the moulds in the idli steamer & let it steam for 7 to 8 minutes

Sambhar Tadka
Heat a pan and put extra light olive oil
Add mustard seeds, urad dal, red chilies, green chilies & curry leaves
Stir for a while & add hing
Add the dal mixture and mix well
Serve the sambhar with idlis and mongapodi with a good drizzle of extra light olive oil


Idli Batter
Soak one cup of rice and half a cup of dal overnight
Grind it to a fine paste
Ferment the batter for at least 6 hours
