INGREDIENTS

1.5-2 pounds slab of pork belly
1/2 cup salt, coarse or kosher (for the salt crust)
1/2 teaspoon five-spice powder
1/4 teaspoon ground white pepper
2 teaspoons salt
2 pieces (20g) fermented red bean curd, optional, can be substituted for 1 tablespoon of shaoxing/rice wine
