Homemade Lasagna Soup

Ingredients

2 pounds Italian sausage
1 large white or yellow onion, diced
5 cloves minced garlic
4 cups beef broth
15 ounces canned tomato sauce
30 ounces canned diced tomatoes
1 tablespoon Italian seasoning
1 teaspoon black pepper
2 bay leaves
2 cups lasagna noodles, uncooked and broken

Cheese Topping:

16 ounces ricotta cheese
1 cup mozzarella cheese
cup parmesan cheese
1 tablespoon Italian seasoning

Instructions

1 Heat a large pot over medium-high heat. Add in sausage and cook until browned, about 8-10 minutes. Drain excess grease and return pan to medium-high heat.

2 Add in onion and saute until soft and translucent, another 5-7 minutes.

3 Add in garlic and let toast 1-2 minutes.

4 Reduce heat to low and pour in beef broth, tomato sauce, and diced tomatoes. Season with Italian seasoning, salt, onion powder, black pepper, and bay leaves. Stir to combine and bring to a simmer over high heat.

5 Once simmering, reduce the heat to medium-low and continue to simmer 15-20 minutes.

6 Add in lasagna noodles and cook an additional 15 minutes, until pasta is al dente.

7 Remove pot from the heat. Dish into a bowl and serve with a dollop of the cheese mixture on top.

Cheese Topping:

1 Combine ricotta, parmesan, mozzarella, and italian seasonings together. Mix until well blended. Refrigerate until time to serve.
