HOMEMADE ICE CREAM (no machine) RECIPE I Creamy, simple and so delicious

In this episode, I'd like to share with you, a simple ice cream recipe. It is amazingly delicious and with this ice cream base, you can make so many kind of flavors. I share a few ideas in the video. I am a true ice cream lover, so believe me when I say: This is one of the best ice creams I've ever had. Hope you give this recipe a try!

INGREDIENTS
200 ml. (1 cup) heavy cream (cold)
400 gr. (7 oz) labneh cheese
2 tbsp butter (at room temp)
A pinch of salt
3/4 cup granulated sugar (plus more to taste, especially if using sour fruits)
1 tsp lemon juice
1 pack (1 leveled tbsp) vanilla sugar or 1/2 tsp vanilla extract

FLAVORS
Cocoa powder
Vanilla sugar (or extract)
Zest of a lemon (or orange)
Chopped dried nuts (Pistachios, walnuts, hazelnuts etc.)
Fresh blueberries
Crushed oreo cookies...etc.

* I don't recommend using dried fruits, they become too hard to eat when frozen.

Fresh fruits, that must be mashed or grated (cherries, apples, bananas, etc.)

DIRECTIONS
If using big fresh fruits, peel them then mash or grate. (about 1/2 cup)
Transfer to a pan.
Cook over medium heat, until all the water is evaporated, stirring frequently.
Transfer to a bowl, let cool completely.
For ice cream base: In a large bowl, pour in cold cream, add a pinch of salt and vanilla sugar (or extract), mix.
Gradually add granulated sugar and beat on low speed, until light and fluffy, for about 2-3 minutes.
Be careful not to over-beat the cream.
Add butter, make sure the butter is at room temp.
Add drained labneh cheese, beat again until well combined.
Add 1 tsp lemon juice, mix with a spatula.
That's it! Now you can add flavors to taste :)
I usually divide the ice cream base into 4 portions, and combine cooked & cooled fruits with the first portion, in a bowl.
Then mix well and transfer the batter to a plastic container.
I add zest of one lemon (only the yellow parts) into the second portion.
Mix and transfer to a plastic container.
I pour a third portion into a plastic container and make vanilla ice cream, you can always add more vanilla to taste.
And I sift 3 heaping tbsp cocoa powder on top of the last portion.
First mix gently with a spoon, then beat until well combined.
Finally scrape the bottom and the sides of the bowl with a spatula.
I also add one handful dark chocolate chips, because it feels good to spoil yourself :)
Transfer batter to a plastic container and smooth the top with a spatula.
Cover the containers, then freeze for at least 8 hours.
Before serving, let ice cream sit at room temp for 5-6 minutes, if eating directly from the container, using a strong spoon :)
If planning to use an ice cream scoop, I suggest to wait for 10-15 minutes (or longer), depending on the room temperature.
You can dip the scoop into warm water, shake off the excess and repeat between scoops, to make your ice cream look nicer.
Scoop any desired flavor, serve immediately and enjoy.
