HOMEMADE FAST FOOD MENU RECIPE
8 pc Chicken - Fries - Biscuit - Coleslaw

In this episode, I'd like to share with you how to prepare
a fast food menu at home. It doesn't take much time,
easy to prepare yet very delicious and healthier.
I much prefer baked to fried.


INGREDIENTS (4 servings)

8 chicken drumsticks, 4 potatoes
1 and a half cup flour
2 cups milk
1 cup cream (200 ml)
1 and a half tbsp powdered sugar
Baking powder
1/2 red cabbage or 1/8 white cabbage
2 carrots
1 cup parsley
1/2 cup light mayonnaise (or yoghurt)
1 tsp mustard
3 tbsp vinegar, 1 tbsp lemon
1 tsp sugar
3 tbsp butter, 1/2 cup olive oil
Salt, pepper, dried thyme, paprika,
1 tsp garlic&onion powder
1 tbsp dried sage (crumbled)
1 cup breadcrumbs

DIRECTIONS:
Preheat your oven to 400F (200C)
Add 2 tbsp vinegar (or lemon juice) to 2 cups milk.
Mix 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika,
1 tsp thyme, 1 tbsp sage, 1 tsp garlic&onion powder
then divide mixture into 3 portions.
Pour 1 portion to the milk.
Use 1 portion to season chicken...
and give them a Thai massage :)
Pour the milk over chicken and set aside.
(For best results, marinate for a couple
of hours in the fridge)
Then peel potatoes and cut into
1/4-inch-thick matchsticks.
Place them in cold water and set aside.
Add 1 tbsp baking powder and the last portion
of the spices into the breadcrumbs, stir and set aside.
Biscuit dough ...
Stir and sift 1 and a half cup of flour, 1 and a half
tbsp of powdered sugar, 1/2 tsp salt,
1 tsp of baking powder.
Add 1 cup of cream and stir with a fork.
Gently knead the dough then cover with
plastic wrap and refrigerate.
For making the coleslaw dressing add
1/2 cup mayonnaise (or yoghurt), 1 tsp mustard,
1 tbsp vinegar, 1 tbsp lemon and 1 tsp sugar
into a salad bowl and mix.
Season to taste and mix again.
Pour carrot, cabbage and parsley into a blender
or food processor, pulse 3-4 times and transfer
to the salad bowl. Mix, taste for seasoning, cover with plastic wrap
and refrigerate.
In a saucepan melt 1/2 cup olive oil and 3 tbsp
of butter.
Put the biscuit dough on floured surface,
pat out flat and cut out biscuits.
Transfer biscuits to a parchment-lined baking
sheet and brush the top of each with
melted butter+olive oil.
Repeat process with remaning dough.
Bake biscuits in the pre-heated oven
for 10-12 minutes.
Meanwhile, line a large baking sheet with
aluminum foil and insert a rack incide the pan,
brush the rack with melted butter+olive oil.
Drain chicken pieces, coat each in the
breadcrumbs mixture and transfer to the rack.
Dry potatoes well in a clean cloth and
transfer to the rack.
Reserve 2 tbsp of the melted butter+olive oil
then pour evenly over chicken and potatoes.
Remove biscuits from oven then bake chicken
and potatoes for 30-35 minutes. (if your oven
have the option, turn the fan on now)
Brush the top of each biscuit with remaning
butter+olive oil once more...
And arrange on a serving plate.
When baking completes, arrange chicken and
potatoes on a serving plate, season potatoes
and enjoy your homemade fast food menu :)
