Making your own mayonnaise is easy to do and very quick. With a whisk it takes about 4 to 5 minutes. If you were to use an immersion blender you could do it in probably 1 minute.

Make this yourself and you'll have a healthier mayo without any high fructose corn syrup and other ingredients that extend shelf like.


Homemade Mayonnaise Recipe

Ingredients:
cup oil, I used avocado oil and extra light olive oil
1 egg, pastured, separated, use yolk only
1 tsp. Dijon mustard
Salt
2 tsp. Lemon juice, fresh squeezed

Directions:
Place the egg yolk in a bowl and add the mustard. Whisk to combine. Then slowly and I mean slowly add the oil to the egg mixture whisking constantly. After you mix in about half of the oil and its emulsifying nicely you can begin to add a little more oil at a time, but again, not too much at a time.

Once all the oil is incorporated, add the lemon juice and whisk that in. Then add salt to taste.

Thats it! Place the mayo in a jar with a nice fitting lid and refrigerate for about a week. Use the mayo on anything you like, potato salad, sandwiches, hamburgers, egg salad, macaroni salad, tuna fish, you get the idea. This is also gluten free!
