Here is the healthiest version of one of the most loved Kutchi street food - Pinwheel Dabeli. This pinwheel dabeli is a high protein, gluten-free, has no sugar and is super delicious. Do try out this #dabelirecipe

Deconstructed Dabeli Pinwheel
Ingredients Dabeli Masala:
2 Kashmiri red chillies
1 tbsp Coriander seeds
1 inch Cinnamon stick
4-5 Cloves
1 tsp Cumin Seeds

Ingredients Lentil Crepe:
½ cup Yellow Moong Dal (soaked for 20 mins)
½ cup Water
1 tsp Tumeric powder
1tsp Dabeli Masala
Salt to taste

Ingredients for the filling:
2 medium Sweet Potatoes (boiled)
1 small onion chopped
2 tsp Dabeli Masala
1 pinch Asafoetida
2 tbsp Date & raisin chutney
2 tsp Olive oil
2 tbsp water
2 tbsp Coriander (chopped)
Salt to taste

Ingredients for garlic chutney:

1-2 Kashmiri red chillies
10 garlic bulbs
1 tsp lemon juice
1 tsp jaggery powder
Salt to taste

Ingredients for Date Chutney:
2 Dates
10-12 Raisins
Warm water

Ingredients for garnish:
Grated coconut
Coriander chopped
Roasted peanuts
Pomegranate

Method for Dabeli Masala:
1. Dry roast all ingredients together and powder. Store in an airtight container.
Method for lentil crepe:
1. Soak the moong dal for 2 hours.
2. Blitz the moong dal till you get a smooth paste with very little water.
3. Then add the salt, turmeric, dabeli masala and water and make a thin batter.
4. Using a non stick frying pan, make thin crepes and keep aside.
Method for the filling
1. Heat a pan add olive oil add asafoetida and sauté onions till light brown.
2. Then add the dabeli masala, sweet potatoes boiled and mashed, date and raisin chutney, salt, coriander and water.
3. Mix all the ingredients well to get a soft mixture.
4. Remove and keep aside.
Method for the garlic chutney:
1. Deseed the kashmiri red chillies and soak them in water for 30 minutes.
2. Blend the soaked chillies garlic and garlic with a little water to make a fine paste.
3. Remove in a bowl and season with lemon juice, jaggery and salt.
Method for Date Chutney:
1. Soak the dates and raisins in warm water for 20 minutes.
2. Blend the dates and raisins with little water to get a fine paste.
Method to assemble:
1. Place the crepe on a flat surface.
2. Spread the garlic chutney, then add the sweet potato filling.
3. Sprinkle chopped coriander and fresh grated coconuts
