Wrapping it with lettuce, carrots and sprouts adds crunch to it.Preparation Time: 10 minutesCooking Time: 10 minutesMakes 4 wrapsFor The Roti1 cup whole wheat flour (gehun ka atta)1 tbsp oila pinch of saltwhole wheat flour (gehun ka atta) for rollingFor The Green Mayonnaise1/2 cup finely chopped coriander (dhania)1/4 cup finely chopped parsley1 tbsp finely chopped green chilliesa pinch of sugarsalt to taste1 tsp lemon juice1/2 cup mayonnaiseTo Be Mixed Into A Herbed Paneer Filling1 cup paneer (cottage cheese), cut into 10 mm. (1 cm)x 10 mm. (1 cm.) cubessalt to taste1 tsp dried oregano1 tsp dry red chilli flakes (paprika)Other Ingredients2 cups roughly torn lettuce1 cup bean sprouts8 tbsp grated carrotFor the roti1. Combine all the ingredients in a bowl and knead into a soft dough using enough water. Keep aside.2. Divide the dough into 4 equal portions and roll out each portion into 200 mm. (8") diameter circle using a little flour.3. Heat a non-stick tava (griddle) and lightly cook the rotis on both the sides. Keep aside.For the green mayonnaise1. Combine the coriander, parsley, green chillies, sugar, salt and lemon juice, and blend in a mixer to a smooth paste using a little water.2. Transfer it to a bowl, add the mayonnaise, mix well and refrigerate for an hour.How to proceed1. Just before serving, warm a roti on a non-stick tava.2. Place the roti on a clean dry surface and arrange ½ cup of lettuce in the centre in a single row of the roti.3. Arrange 1/4th of the herbed paneer filling and 1/4 cup of bean sprouts and 2 tbsp carrots over it.4. Finally spread 1/4th of the green mayonnaise over it and roll up the roti tightly.5. Repeat with the remaining ingredients to make 3 more wraps. Serve immediately.
