A casserole worth trying, loaded with cheese, rice, spinach and chicken, this recipe is an all in one package.

HERBED CHICKEN RICE CASSEROLE

Ingredients

250 grams boneless chicken breast, cut into 1 inch cubes
2 tsps mustard sauce
1 tsp vinegar
Salt to taste
Crushed black peppercorns to taste
1 sprig of fresh oregano
1 tbsp oil
7-8 button mushrooms, sliced
¾ cup white sauce
3 tbsps milk
1½ cups basmati rice, boiled
12-15 spinach leaves, blanched and chopped
Dried bread crumbs for sprinkling
Parmesan cheese powder for sprinkling

Method

1. Take chicken in a large bowl, add mustard sauce, vinegar sauce, salt and crushed black peppercorns. Remove the leaves from the oregano sprig and add into the bowl. Mix well and set aside to marinate for 15-20 minutes.
2. Heat oil in a non-stick wok, add the chicken and sauté on high heat for 4-5 minutes.
3. Add mushrooms and mix well. Cook for 3-4 minutes.
4. Preheat the oven at 180ºC.
5. Add white sauce and mix well. Add milk and mix and cook for 1 minute.
6. Add rice and toss well. Adjust seasoning and mix, cook for 1 minute. Take the pan off the heat.
7. Transfer the prepared rice mixture into an oven proof tiffin box, sprinkle spinach and sprinkle dried bread crumbs and parmesan cheese powder. Bake for 10-15 minutes.
8. Pack the tiffin box.
