A casserole worth trying, loaded with cheese, rice, spinach and chicken, this recipe is an all in one package.HERBED CHICKEN RICE CASSEROLEIngredients250 grams boneless chicken breast, cut into 1 inch cubes2 tsps mustard sauce1 tsp vinegarSalt to tasteCrushed black peppercorns to taste1 sprig of fresh oregano1 tbsp oil7-8 button mushrooms, sliced¾ cup white sauce3 tbsps milk1½ cups basmati rice, boiled12-15 spinach leaves, blanched and choppedDried bread crumbs for sprinklingParmesan cheese powder for sprinklingMethod1. Take chicken in a large bowl, add mustard sauce, vinegar sauce, salt and crushed black peppercorns. Remove the leaves from the oregano sprig and add into the bowl. Mix well and set aside to marinate for 15-20 minutes.2. Heat oil in a non-stick wok, add the chicken and sauté on high heat for 4-5 minutes.3. Add mushrooms and mix well. Cook for 3-4 minutes.4. Preheat the oven at 180ºC.5. Add white sauce and mix well. Add milk and mix and cook for 1 minute.6. Add rice and toss well. Adjust seasoning and mix, cook for 1 minute. Take the pan off the heat.7. Transfer the prepared rice mixture into an oven proof tiffin box, sprinkle spinach and sprinkle dried bread crumbs and parmesan cheese powder. Bake for 10-15 minutes.8.
