A fantastic mixture of fresh herbs, lettuce leaves and medley of seeds make a delightful salad

HERB SALAD

Ingredients

12-15 fresh green basil leaves
15-20 fresh purple basil leaves
15-20 fresh mint leaves
2-3 medium red radish
½ medium onion
5-6 iceberg lettuce leaves
5-6 lolo rosso lettuce leaves
5-6 romaine lettuce leaves
Few sprigs of fresh coriander leaves
Few sprigs of fresh curly parsley
1 tbsp pumpkin seeds
1 tbsp pinenuts
1 tbsp sesame seeds
Salt to taste
1 tbsp lemon juice
1 tsp honey
½ tsp crushed black peppercorns

Method

1. Put the smaller green basil leaves into a bowl, tear the bigger ones and add.
2. Add purple basil leaves and mint leaves.
3. Lightly roast pumpkin seeds, pinenuts and sesame seeds.
4. Thinly slice red radish and onion and put into the bowl.
5. Tear iceberg, lolo rosso and romaine lettuce leaves and put into the bowl.
6. Chop a few sprigs of fresh coriander leaves and parsley and add.
7. Add salt, lemon juice, honey and crushed black peppercorns and mix well.
8. Keeping aside a few of the roasted seeds, add the rest to the bowl and mix well.
9. Transfer into a serving plate, garnish with the reserved roasted seeds and serve immediately.
