Healthy Shepards Pie

Ingredients:
1 1/4lb. ground lamb
1 yellow onion, diced
3 cloves garlic, minced
1 cup frozen peas
1/2 cup chicken broth
2 carrots, diced
1 stalk celery, diced
1 tsp. cinnamon, divided
1/2 tsp. ground cumin
1 tsp. turmeric, divided
3/4 cup coconut milk
3 Tbsp. butter
1/2 cup zucchini, diced
5 to 6 basil leaves, chiffonade
salt and pepper to taste
20 oz. of butternut squash, 1 inch cubes
4 medium or 3 large russet potatoes, 1 inch cubes


Directions:

Preheat oven to 400 degrees F.

Brown the lamb, onion, celery, carrots and salt in a large frying pan over medium high heat for about 10 minutes or until the lamb is cooked through.

Drain off the fat and add the garlic and stir and saute for 1 minute. Add the cinnamon, cumin, turmeric, chicken broth, peas, and zucchini. Stir to combine and heat through. Sprinkle the basil on top and stir in.

Place a lid on the lamb mixture and keep warm.

Steam the potato and butternut squash together in a steamer until fork tender. Keep them divided.

Place the cooked potatoes and squash in separate bowls. Heat the coconut milk and butter in the microwave until warm.

Mash the potatoes with 1/2 of the coconut milk mixture and add salt and pepper to taste.

Mash the butternut squash with the other half of the coconut milk mixture and add 1/2 tsp. cinnamon and turmeric with some salt and combine.

Layer a 9 x 13 baking dish with the butternut squash mixture. Then add the lamb mixture
on top of the squash.

Finish with the mashed potatoes.

Place in the oven for 15 to 20 minutes or until everything is bubbly hot.
