Why do we all go crazy for pumpkin recipes in the fall? I don't know, but I love pumpkin fall recipes. I got the original inspiration for this recipe from a pumpkin tofu cake recipe from ,Japanese Vegetable Recipes , Okinawa kafe no herushreshipi on YouTube. Here's a link to the original video:

I really liked the recipe because its light, healthy and just a bit sweet, with a texture a bit like an airy cheesecake. But it did take time to bake it. So I wanted to make a version that I could make quickly and enjoy a single serving any time I desired and I do believe that I have succeeded! Tofu dessert recipes made easy!

Ingredients:
3T canned pumpkin (unsweetened)
1/8 block tofu
1.5T real maple syrup
2T non-dairy milk of choice
1/2t baking powder
1/2t pumpkin pie spice
4T ground oats (use certified gluten free if desired)
2t pumpkin seeds as garnish (optional)
Vegan whipped cream of choice as garnish (optional)

Steps:
1. Grind your oats in a food processor, blender or spice grinder. I like to grind several cups at a time in the blender then keep them in a container by my other flours so I can have it ready to go at any time.
2. Drain the water from your block of tofu and press it in between two plates wrapped in a towel
3. In a microwave safe mug, crumble the 1/8th block of tofu, then add the 3T canned pumpkin, 1.5T real maple syrup and 2T non-dairy milk. Use an immersion blender to blend the wet ingredients. If you dont have one, thats ok, just use a fork and mash and mix up the tofu and other ingredients the best you can.
4. Add the 1/2t baking powder and pumpkin pie spice to the mug. When adding the 4T ground oats, fill the measuring spoon by scooping into it with another spoon (similar to the way you would add flour into a larger measuring cup so that it wont be packed too tightly).
5. Mix all ingredients thoroughly and push down any bits that have got up on the side and level the batter.
6. In a 900 watt microwave, I microwaved for one minute. Depending on the wattage in your microwave you can increase or decrease the time.
7. If desired, top with a few teaspoons of raw pumpkin seeds and vegan whipped cream of choice.
8. Let cool several minutes so that you dont burn the roof of your mouth then enjoy this wonderful low carb vegan keto recipes!
