Mix veg curry is a simple and tasty recipe of mixed vegetables made in North Indian style. It is often prepared at home for a quick dinner. It is a delicious and healthy veg recipe which can be eaten with Indian breads like chapati, paratha, poori or Rice dishes like jeera rice or steamed rice etc.

Mixed veg Curry is served in almost all Indian restaurants. The restaurant version of this dish is slightly heavy and creamy. But you can also make a light, colorful and healthy mix veg curry at home with minimal spices. To keep it simple I have not used any cashews or coconuts.

Ingredients -
* 3 tbsp oil or ghee
* 1 tsp cumin seeds
* 2 medium sized onions, finely chopped
* 1 tsp ginger-garlic paste
* 2 medium to large tomatoes, finely chopped 
* 1/2 tsp turmeric powder
* 3/4 tsp red chilli powder 
* 1 tsp coriander powder
* 2 cups chopped mix vegetables - cauliflower, carrots, potatoes, green beans
* 1/2 cup green peas, fresh or frozen
* 2 cups water or add as required
* 1 tsp salt or as per taste
* 1/4 cup fresh cream or malai
* 1 tsp garam masala powder  
* 2 tbsp chopped coriander leaves, chopped

Imp. Notes -
* You can also add any veggies such as capsicum, paneer, broccoli, zucchini etc. 
* Adding Fresh cream is optional, it is added just to enhance the flavour of the curry.
* Instead of Fresh cream, you can also add coconut milk towards the end. This will give a creamy and rich taste.
* Cauliflower florets should be soaked in hot water along with 1/2 teaspoon turmeric powder for about 5 minutes always before using them in any recipe.
* Green Peas (fresh / frozen) should be pressure cooked for about 3-4 whistles.
