6 Healthy Mediterranean Recipes - Nourish & Delight

Its the cooking with the bone that keeps the thigh juicy and flavourful making it the tastiest part of the chicken. Similar to a Fricasse, its first sauted in olive oil and then gently braised in the oven in its own juices until cooked moist and tender. Always a hit with any chicken lovers.

(2) Braised Chickpeas Mediterranean Style. Healthy Vegan Meal.This chickpea recipe is Mediterranean Greek style and so healthy. Its cheap to make and perfect when theres a shortage of fresh ingredients. The chickpeas can be used from cans or dried in packets. This recipe has heart plus more, although healthy, its really about the incredible combination of flavours, if youve ever been near the Mediterranean sea, this will bring back memories (can you hear the waves crashing on the rocks?). Its relatively easy to make and the crunchy pops of salty capers bring in that extra texture that will make your taste buds rock! You can use any other similar white fish if Snapper is not available in your area. Buy a whole fish thats been filleted with the skin on, and make it fresh! I think I could eat this everyday!

(5) Mediterranean Baked Beans. a Healthy Vegetarian Meal. A nutritious and delicious Mediterranean meal. The beans are creamy and succulent, full of flavours and topped with a toasted olive oil parsley crust. This recipe is also perfect for vegans and vegetarians, simply use vegetable stock instead of chicken. Its best to soak the beans the day before, however you can cook them from dry if you dont have the time. They will take longer and be a little mushier. Even though the beans will bake for over 40 minutes, dont under cook the beans when boiling, try and cook them so they are firm but ready to eat before baking. (6) Mediterranean Spiral Pasta. Vegetarian meal made with eggplant, capsicum, sun dried tomatoes, olives and feta cheese. This spiral pasta is called Fusilli which comes from a word meaning rifle as it looks like the inside of a barrel gun. Its a cork screw shape pasta designed to retain some of the sauce for more flavour in each mouthful. This recipe is vegetarian and uses char grilled vegetables. Its made with eggplant, capsicum or bell pepper, green olives and sun dried tomatoes. You can usually buy them already grilled from your deli which will half the cooking and prep time. Or grill them yourself on your griddle for a fully home made meal.
