Healthy Lemon Brownies Recipe #springcake2021

Here's a healthy lemon brownies recipe! Wait - brownie recipe no chocolate? Yes! Some people call these lemonies, or lemon cake bars. But whatever you call them, add these easy lemon brownies to your stable of lemon dessert recipes. How are they healthier? I've subbed out white flour, which is not a whole grain, for teff flour, which IS a whole grain. I've also replaced nasty man made white sugar with my favorite zero calorie natural sweetener, monk fruit. Bonus healthiness points if you also use grass fed butter and cage free eggs!

Ingredients:
cup teff flour
2/3 cup monk fruit
cup unsalted butter, softened
1t vanilla extract
1/2t salt
3 large eggs
3T lemon juice, divided
1T + 1t Lemon zest, divided
1/3 cup powdered monk fruit (grind regular monkfruit in a spice grinder if you dont have powdered)

Directions:
- Preheat oven to 350 degrees F. Coat an 8-inch-square baking dish with coconut oil cooking spray or grease with butter
- Beat teff flour, monk fruit, butter, vanilla and salt in a large bowl with an electric mixer until combined. Add eggs, 2 tablespoons lemon juice and 1 tablespoon zest; continue beating until smooth. Pour the batter into the prepared baking dish. Bake until a toothpick inserted in the center comes out clean, 20 to 22 minutes. Cool completely.
- Meanwhile, whisk powdered monkfruit and the remaining 1 tablespoon lemon juice and 1 teaspoon zest in a small bowl. When the brownies are cool, spread the glaze over the top.
