2 IN 1 Stuffed Batis and Batata Vada! #StuffedBatis #BatataVada

Generally Dal Batis are restaurant dishes and most of us don't try it at home due to the hassle of Tandoor etc. And my experience is that most of the restaurants in Bikaner did not serve Dal Batis -  in my stay of 3 years there. But, popular hotels in Chennai like Saravana Bhavan or Annapoorna do serve it in some of their menus. But, with the pandemic around us, it's almost impossible to eat out. Therefore I decided to try out the Batis without the Dal, churma - just the Batis stuffed with Potato filling and cooked beautifully in an appam maker. So these Stuffed Batis can be enjoyed as a snack with tea or coffee.

While I was planning these Stuffed Batis, I decided to make the ever popular Batata Vadas with the same Potato filling and same Appam maker. So a 2 IN 1 Stuffed Batis and Batata Vada from #SujanFunKitchen

Stuffed Batis:

Ingredients for the Potato Filling:

Potato – 1/2 kg


Big onions – 1


Green chilies – 2


Ginger – to taste


Cumin seeds – 1tsp

Mustard seeds - ½ tsp

Coriander powder - 2 tsp

Jeera powder - 1 tsp

Red chilli powder - 1 tsp

Turmeric powder – to taste


Coriander leaves – 1 bunch


Lemon juice – 1tsp or Amchur powder


 Oil to cook


Salt to taste


Method for the stuffing:


1. Boil the potatoes, peel, mash roughly and keep aside


2. Chop the onions; grind green chilies and ginger together


3. Now, heat the kadai/pan, add few teaspoonful of oil


4. To the hot oil, add mustard seeds and cumin seeds and allow to splutter


5. Now add the chopped green chilies, ginger and onions and stir fry till onions are translucent. Add the coriander powder, jeera powder and red chilli powder and stir fry over minimum flame


6. Then add the mashed potatoes and cook everything together


7. Add salt and toss together


8. Now it’s time to add a dash of lemon juice or Amchur powder and chopped coriander leaves


9. Allow to cool a bit and shape into small balls

Ingredients for Batis:

Wheat flour - 1 cup

Sooji - ⅛ cup

Ghee - ⅛ cup

Baking soda - ¼ tsp

Salt to taste

Crushed coriander seeds, fennel seeds and carrom seeds - just a bit of each

Method:

Add the wheat flour and sooji to a big bowl

Add the ghee and rub well with the flours

Now, add the baking soda and salt and keep mixing well till the flour resembles bread crumbs

Now, adding water little by little make a stiff dough

Allow the dough to rest, covering it, for 10 mins

After the resting time if 10 mins, knock out the air

Divide into equal sized rolls

Shape each roll into a cup and stuff with the potato filling

Place an appam maker on flame and reduce flame to minimum

Add few drops of ghee in the Appam maker slots and place the Stuffed Batis

Brush the top of Stuffed Batis with more ghee

Close appam maker and cook for 2 mins

Open and turn over the Stuffed Batis

Spread more ghee on top - cover and cook for 2 more mins

Do till the Stuffed Batis are cooked to a golden colour - also they will have cracks on them

Serve with any chutney or sauce
