2 IN 1 Stuffed Batis and Batata Vada! #StuffedBatis #BatataVadaGenerally Dal Batis are restaurant dishes and most of us don't try it at home due to the hassle of Tandoor etc. And my experience is that most of the restaurants in Bikaner did not serve Dal Batis - in my stay of 3 years there. But, popular hotels in Chennai like Saravana Bhavan or Annapoorna do serve it in some of their menus. But, with the pandemic around us, it's almost impossible to eat out. Therefore I decided to try out the Batis without the Dal, churma - just the Batis stuffed with Potato filling and cooked beautifully in an appam maker. So these Stuffed Batis can be enjoyed as a snack with tea or coffee.While I was planning these Stuffed Batis, I decided to make the ever popular Batata Vadas with the same Potato filling and same Appam maker. So a 2 IN 1 Stuffed Batis and Batata Vada from #SujanFunKitchenStuffed Batis:Ingredients for the Potato Filling:Potato – 1/2 kgBig onions – 1Green chilies – 2Ginger – to tasteCumin seeds – 1tspMustard seeds - ½ tspCoriander powder - 2 tspJeera powder - 1 tspRed chilli powder - 1 tspTurmeric powder – to tasteCoriander leaves – 1 bunchLemon juice – 1tsp or Amchur powder Oil to cookSalt to tasteMethod for the stuffing:1. Boil the potatoes, peel, mash roughly and keep aside2. Chop the onions; grind green chilies and ginger together3. Now, heat the kadai/pan, add few teaspoonful of oil4. To the hot oil, add mustard seeds and cumin seeds and allow to splutter5. Now add the chopped green chilies, ginger and onions and stir fry till onions are translucent. Add the coriander powder, jeera powder and red chilli powder and stir fry over minimum flame6. Then add the mashed potatoes and cook everything together7. Add salt and toss together8. Now it’s time to add a dash of lemon juice or Amchur powder and chopped coriander leaves9. Allow to cool a bit and shape into small ballsIngredients for Batis:Wheat flour - 1 cupSooji - ⅛ cupGhee - ⅛ cupBaking soda - ¼ tspSalt to tasteCrushed coriander seeds, fennel seeds and carrom seeds - just a bit of eachMethod:Add the wheat flour and sooji to a big bowlAdd the ghee and rub well with the floursNow, add the baking soda and salt and keep mixing well till the flour resembles bread crumbsNow, adding water little by little make a stiff doughAllow the dough to rest, covering it, for 10 minsAfter the resting time if 10 mins, knock out the airDivide into equal sized rollsShape each roll into a cup and stuff with the potato fillingPlace an appam maker on flame and reduce flame to minimumAdd few drops of ghee in the Appam maker slots and place the Stuffed BatisBrush the top of Stuffed Batis with more gheeClose appam maker and cook for 2 minsOpen and turn over the Stuffed BatisSpread more ghee on top - cover and cook for 2 more minsDo till the Stuffed Batis are cooked to a golden colour - also they will have cracks on themServe with any chutney or sauceAs for Batata Vada, I already have a video:https://youtu.be/uCB5MdEs7ho
