Healthy Fruit Bread Recipe! Healthy Pear Bread Recipe (or Apple Bread)

This is a healthy fruit bread (or at least a lot healthier): a healthy pear bread recipe (or apple bread recipe)! Why is it healthier? Because weve ditched white flour and man made white sugar for healthier whole food choices. If youre looking for how to use up pears, this is a great way! This is a healthier quick bread because Ive included two different whole grains combined with almond flour instead of white flour and replaced white sugar with a combination of monk fruit and honey, which are natural sweeteners. it also offers a nice alternative to banana bread. So add this to your sugar free baking recipes its not overly sweet but just sweet enough and has a great nutty flavor. Healthy baking recipes that are tasty, imagine that! By the way, i just realized this is for all intents and purposes a rectangular pear cake. Strange that we call it pear bread just because we bake it in a breadpan, LOL. At least it's a healthier cake!

Makes 2 loaves:
ingredients
3 large eggs, room temperature
cup honey
cup monk fruit
3/4 cup coconut oil (melted)
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup almond flour
1 cup oat flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
Zest of 1 lemon (optional)
1 teaspoon baking soda
1 teaspoon salt
4 cups finely chopped peeled ripe pears (or apples) (about 4 medium)
1 teaspoon lemon juice
water (if necessary, to make batter less thick when using oat and/or whole wheat flour)

Directions
Peel and chop pears. Mix peeled and chopped pears in a bowl with lemon juice. This will prevent browning.
In a different bowl, combine the eggs, monk fruit, honey, melted coconut oil and vanilla; whisk well. Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture just until moistened. Stir pears into batter (batter will be thick). If using oat and/or whole wheat flour, let sit for 10 minutes for the flour to absorb moisture. Batter should be thick but not clump, it should still flow just a bit if you pick it up on a spoon and let it drop back into the bowl (it shouldnt plop with a thud). If its too thick, add 1-2 tablespoons water then check again for consistency.
Spoon into 2 greased 9x5-in. loaf pans. Bake at 350F/175C for 55-60 minutes or until a toothpick inserted in the center comes out clean and the edges are beginning to look firm. Cool for 10 minutes before removing from pans to wire racks. Let cool completely before eating to allow the coconut oil will solidify and help firm up the bread.
