Munaga Aku Pachadi - Moringa Leaves Chutney/ Drumstick Leaves Chutney.

Method of Preparation

For Moringa Leaves Chutney will use tenser shoots and leaves, clean them, and wash them all.
Wash them well twice and place them on a cloth to dry for a while.
Heat a pan with 1 Tsp of Oil, add 7 to 8 Green Chiles fry them all and keep them aside in a bowl.
To the same pan add some oil if required and fry 1 Cup of Munagaku/Moringa for 3 to 4 Min.
Add 1/4 Tsp of Fenugreek Seeds and 1/2 a Tsp of Cumin Seeds, mix and fry for a while.
Add 2 Tomatoes diced and cook it fr a while with a lid on it.
Then, add 1 Tsp of Salt or as needed, and 1/4 Tsp of Turmeric Powder mix them all and cook until tomatoes are soft.
Put off the flame and let it cool down completely.
To the Mixie Jar add roasted/fried Munagaku, 7 to 8 Garlic Pods, and Lime sized washed Tamarind.
Add fried Green Chilies and grind them all into a fine paste, add water if required.
Adjust taste accordingly, then will temper the chutney.
Heat a pan with 1 Tsp of Oil, add 1 Tsp of Black Gram, 1/2 a Tsp of Mustard & Cumin Seeds each.
let them splutter, add 2 Red Chilies & 2 Shoots of Curry Leaves and add the ground chutney to the temper.
Tasty and Delicious Moringa Chutney is ready, can be stored for 1 Week to 10 Days.
Serve it with hot steamed rice, roti, Idli or Dosa.
