HEALTHY COOKIESIngredients1 cup muesli1 cup oats2 eggs½ cup pumpkin puree2 tablespoons coconut oil¼ cup honey2 tablespoons roasted pumpkin seeds2 tablespoons dried cranberries2 tablespoons toasted and crushed flax seeds A pinch cinnamon powder2 tablespoons whole wheat flourA pinch saltMethod1. Break eggs in a bowl. Add pumpkin puree and mix. Add coconut oil and whisk. Add honey and whisk well.2. Add muesli, pumpkin seeds, dried cranberries, flax seeds, cinnamon powder and oats and mix. 3. Add wheat flour and mix. Add salt and mix well. Refrigerate for 1-2 hours.4. Preheat oven to 180º C. 5. Divide the oats mixture into equal portions, shape into balls and lightly flatten. Place on a baking tray.6. Put the tray in the preheated oven and bake for 15-18 minutes. Remove from oven and cool. 7. Serve or store in an air-tight jar.
