Blend until smooth. Pour into a bowl and top with pecans, pineapple, coconut chips and dates. LUNCH: Waldorf Salad Bowl 2 cups romaine lettuce, chopped cup grapes, halved apple, diced cup celery, chopped cup walnuts, chopped1 boneless skinless chicken breast, cooked and sliced2 tbsp blue cheese dressing Toss romaine lettuce with one tablespoon of blue cheese dressing. Top with grapes, apple, celery, walnuts and cooked chicken. Drizzle with another tablespoon of dressing. DINNER: Fish Taco Bowl 1 cup wild rice, cooked1 tilapia filet, cooked and flaked cup mango salsa cup red cabbage, shredded cup black beans, rinsed and drained avocado, sliced1 lime, juicedfresh cilantro In a bowl top wild rice with mango salsa, red cabbage, black beans, avocado and tilapia.
