Golden flax preferred, but brown flax is fine also.1 teaspoon baking powder teaspoon baking soda teaspoon salt1 teaspoon cinnamonScant cup honey2 eggs1/3 cup coconut oil2 large or 3 medium very ripe bananasOptional: cup chocolate chips (for entirely sugar free use 100% cacao chips)DirectionsPreheat the oven to 350 degrees Fahrenheit. If you dont have flax meal, grind 2/3 cup flaxseeds in a spice grinder to a fine flour consistency (20-30 seconds). Mix the dry ingredients (white flour through cinnamon) in a bowl. In a second bowl, mash the bananas well. Then to the bowl with the mashed banana add the honey, 2 beaten eggs, and 1/3 cup coconut oil (Measured in solid state, then melted before adding to bowl). Mix all wet ingredients together well. Add the dry ingredients to the wet ingredients 1/3rd at a time, making sure everything is fully moistened before adding the next 1/3rd. Lastly if using chocolate chips, then fold them in. Pour the batter into a standard loaf size pan and bake in the oven for 55 minutes or until golden brown on top, edges look firm and have just started to pull away from the edge of the pan and internal temperature is at least 190 degrees Farenheit in the center of the thickest part. Remove from oven and let cool in pan for 10-15 minutes, then remove from pan and continue to cool on a cooling rack.
