Japanese-Italian Fusion Tiramisu for Halloween

Halloween Kabocha Tiramisu (Japanese Pumpkin Squash Dessert Idea)

Difficulty: Very Easy
Time: 30min + cooling time
Number of servings: 3 dessert cups

Ingredients:
150g (5.3oz.) Kabocha (Japanese squash)
100g (3.5oz.) mascarpone cheese
100ml whipping cream
2 tbsp. granulated sugar
1 egg yolk
12 biscuits *sponge cake is ok
* 1 tbsp. instant coffee
* 1 tbsp. granulated sugar
* 4 tbsp. hot water
cocoa powder
chocolate covered pretzels for spider legs
chocolate candies for spider eyes

Directions:
1. Cut Kabocha into large chunks, place them in a microwavable container, cover and microwave on medium for 5~6 minutes until soft.
2. Scoop out the Kabocha and strain through a sieve to make it smooth. (You can eat the Kabocha skin, so don't throw it out! Kabocha skin contains a lot of vitamins. Simply eat with salad or simply with mayonnaise is good!)
3. Add sugar and egg yolk. Mix well, cover, and set aside in the fridge.
4. Mix 4 tbsp. hot water, instant coffee, and 1 tbsp. of granulated sugar together to make coffee syrup. Put the syrup in a flat container and soak the biscuits.
5. In the Kabocha mixture, add mascarpone cheese and mix well.
6. Beat whipping cream with an electric mixer until stiff peaks form, then add the Kabocha mixture and mix well with a spatula.
7. Layer the cream and biscuits in serving cups (about 3 layers). Keep in the fridge for at least two hours (or overnight) to set.
8. Sprinkle with cocoa powder before serving. To make spooky spider decoration, I used broken pieces of chocolate covered pretzels (for legs) and chocolate candies (for eyes).
